New Recipes

Cilantro Lime Chicken

4 Chicken Breasts
(I used tenderloins because they cook faster and .... that's all I had anyways)
1/4 c lime
1/2 c chopped cilantro
(I only used 1/4 c because I got mine fresh out of the garden and it's a lot more potent)
6 cloves chopped garlic
(I substituted garlic salt to taste)
1 T honey
( I would recommend using 1 1/2 T)
1 T olive oil
1/2 t salt
1/4 pepper

I put it all in a ziploc baggie and let it marinate for a couple of hours. The official recipe says you can do 30 minutes and then cook it but it's sooo-o much better if you go longer.

Grill about 4-6 minutes per side on Medium Heat

This was a hit with the hubby because it was good and it's a favorite of mine because it was super easy. Sided with a homemade mac and cheese (compliments of my sister Tisha) this was a tasty dinner. 

Beefy Corn Bread Casserole

1 lb ground beef, browned and drained
1 med onion or onion powder to taste
1 can tomato soup
1 can whole kernel corn, drained
1-2 T chili powder
1 t salt
1/2 c water

Topping:
1 (6.5 oz) package corn bread mix
1 egg
2 T butter/margarine, melted
1/3 c milk
1/2 c grated cheddar cheese (I use colby jack)

Put beef and onion in slow cooker. Stir in soup, corn, chili powder, salt and water.

In a bowl, mix together cornbread mix, egg, butter, and milk. Spread batter evenly over the meat mixture. Cover and cook on low heat for 5/6 hours or until a toothpick inserted into the center comes out clean. Sprinkle the cheese over top for the last 15 min of cooking. 

Don't know how this one is going to turn out. 
It looks and smells good but that can be VERY deceiving.

My goals are coming along nicely! I have some really good ideas and I'm definitely making progress! 

I wanted to post as soon as possible after that last post because I couldn't stand to look at that spider anymore!

All from your cookbook? Glad you are branching out. And that spider post was sick. Have you checked groupon/ksl for the spider sprays they are offering?
